Anticuchos

This distinctive Peruvian street food is a beef heart which is seasoned with cumin, panca chili, vinegar adobo and garlic, then hit on a fire like a shish kabob. It is normally served with corn on the cob or boiled potatoes.

Quinua

Given that it's a delectable substitute for wheat, it is typically eaten by people with celiac ailment. This can be found in Andean regions and Puna which can also serve several other cuisines like soup, solterito salad and tamales.

Sanguche de chicharron

Each sangucheria has its own secret strategy of preparation. Some may bubble up ribs before sealing flavors in a griddle and some do the other way. With its bread, some prefer a baguette while some wanted a soft bun. It's naturally bettered with homemade salsa criolla, which is a mixture of Peru's ubiquitous lime juice, red onions, yellow chilies, cilantro and white vinegar.

Cuy chactado (deep-fried guinea pig)
